Last weekend, I had opportunity to have a lunch at Kim Ma Restaurant, one of the restaurant in the majestic Palace of the Golden Horses. When stepping into the restaurant, I was awed with the interior of the restaurant with its modern Chinese design. Decoration oozes the concept of elegance and strength, with poise and beauty that is fitting of their symbol and name of the restaurant, Kim Ma translates to Golden Horse in Mandarin. I can’t wait to taste their dishes as they are an Award Winning of Chinese Cuisines.
The restaurant’s 5 private rooms are plush and luxurious. Sofa sets are placed at the front for guests to chill with pre-dinner drinks before adjourning to the dining area at the back. Kim Ma has a seating capacity of 120 including the 5 private rooms. 1 of the private rooms is one of my favourite because of exquisite carving of the furnitures.
We had been introduced with the Executive Chinese Chef Chris Lim, a very good looking and young chef who responsible to create the fusion of traditional Chinese cuisines with a contemporary twist. He said he get his inspiration from the beautiful surrounding of the Palace of the Golden Horses hotel. After hearing about the menu that will be serve, we just can’t wait to have our lunch.
The first dish was of course Yee Sang. When we talked about the fusion, Yee Sang will not be exempted. Be prepared with the most unique and refreshing Yee Sang ever. It is mixed with the fresh fruits including strawberries and dragon fruits. Sound good right? Yeah, let me tell you, usually I will have one or two bites of Yee Sang, but for this, one plate is not enough for myself. It is always good to start your dishes with fruits.
Second dish was Chef Chris Lim famous Double-boiled Minced Chicken Broth with Morel Mushroom and Fish Maw was a typical example of the man’s genius. One would never guess that the delicate creamy layer floating by the side of the soup bowl was actually minced chicken and not tofu. It had the light silky texture of beancurd or whipped eggwhite – it’s mind-blowing how that could have come from minced chicken! I can eat this everyday… plus this is the favourite dish for the owner of Palace of the Golden Horses, Tan Sri Lee Kim Yew.
Third dish was Pan Fried Australia Lamb in Mongolian Sauce with Honey Mint Salad. At first, I was quite worried with this dish, because I am not fan of a lamb. The lamb was well done and the Mongolian sauce is kind of sweet and sour sauce. Actually, the special about this dish is the sauce because usually, lamb always served with mushroom or black pepper sauce, but with this Mongolian Sauce plus Honey Mint Salad, it had balanced the taste of the meal. Surprisingly for non-lamb lover, I finished my plate and I can say that this lamb was superb and for a while, I was forgot that I was eating a lamb.
The fourth dish was good like the other three dishes. It was Braised ‘Ye-Fu’ Noodles with Sautéed Canadian Scallops in Lobster Broth. The broth is riches with scallops and lobsters flavours and you need to mix up the noodles with the broth before you eat it. It was an excellent complicated dish.
The last was dessert. We had served with Homemade Organic Soya Bean Milk with Water Chestnut and Glutinous Rice Dumpling. It was good and not that sweet. It reminded me with Bubur Cha Cha.

Wow such a great dining experience with delicate food like this. I am tempted by their Pan Fried Australia Lamb in Mongolian Sauce.
